English Trifle to Die For

Trifle, in english cuisine , is a dessert made with fruit , a thin layer of sponge fingers soaked in sherry or another fortified wine , and custard. It can be topped with whipped cream. The fruit and sponge layers may be suspended in fruit-flavoured jelly , and these ingredients are usually arranged to produce three or four layers. The contents of a trifle are highly variable; many varieties exist, some forgoing fruit entirely and instead using other ingredients, such as chocolate , coffee or vanilla.

A proper english trifle is made with real egg custard poured over sponge cake soaked in fruit and sherry and topped with whipped cream. The english call versions of this cake a tipsy cake or pudding, tipsy squire, and tipsy hedgehog. It was also known as tipsy parson and tipsy squire in america. Andrew scrivani for the new york times i call this irish trifle because it was my irish ex-in-laws who introduced me to this wonderful dish. It is one of the most irresistible desserts i make. I love to have leftovers because the cake just keeps soaking up that amazing custard sauce, which is spiked with sherry. I use up a few of the egg whites left over from making the crème anglaise in the cake, opting for a biscuit, in which the egg whites are beaten to a meringue, over a richer sponge cake. Although jam is traditional in this trifle, you could always top the cake with a berry compote instead.

Email trifle (tri-fuhl) – the word “trifle” comes from the old french term “trufle,” and literally means something whimsical or of little consequence. A proper english trifle is made with real egg custard poured over sponge cake soaked in fruit and sherry and topped with whipped cream. The first trifles were very much like fools (an old confection of pureed fruit mixed with cream), and the two terms were used almost interchangeably for many years. Many puddings evolved as a way of using up leftovers and trifle originated as a way to use stale cake. According to trifle history, the english trifle is a close cousin of an italian version called “zuppa ingles” (english soup), and also seems distantly related to a spanish dessert called “bizcocho borracho. ”.
